To my surprise, it doesn't appear that there is a single successful instance of someone installing Linux on a Google Home, or Amazon Echo. Was hoping someone had figured it out by now.

Yeah, I'm guessing its a combination of locked bootloader and there is no direct access to the eMMC storage. With all the work done by the XDA community on mobile phones, you would think someone would have something by now.
